Açúcar, manteiga de cacau, leite em pó integral, leite em pó desnatado, emulsificantes lecitina de soja e polirricinoleato de poliglicerol e aromatizante sintético idêntico ao natural.

Aqueça água em uma panela até 60°C; esta temperatura ainda consegue suportar com os dedos da sua mão, e quando a água começa a borbulhar. Em um recipiente limpo e seco você adiciona o chocolate picado. Use a panela com o banho-maria para este recipiente com o chocolate. Mexa até que o chocolate esteja derretido.
Atenção: a boca do recipiente onde o chocolate foi colocado deve ser maior que a da panela para que o vapor d’água não gere umidade para o seu chocolate.
Em um recipiente limpo e seco próprio para micro-ondas, você adiciona o chocolate picado. Regule o seu micro-ondas para potência 50% e ligue por 30 segundos, mexa com uma espátula e repita o processo até que esteja completamente derretido. Verifique a temperatura que ao final do derretimento deve estar entre 45°C e 50°C.
A Linha Chocolate Profissional Canagá é caracterizada como um chocolate nobre, feito com sólidos de cacau puro, por isso é necessário a tempera do mesmo.
• Em uma pedra de mármore ou granito limpa e seca, despeje o chocolate derretido a 45°C e 50°C, reservando ¼ na vasilha.
• Com o auxílio de uma espátula, movimente o chocolate pela pedra, espalhando e juntando até que o chocolate atinja a temperatura de 27°C.
• Retorne o produto para a tigela e homogeneíze até que o chocolate atinja a temperatura de 28°C.
• Seu chocolate estará pronto para moldar ou cobrir.
• Mantenha o seu chocolate em local limpo, seco, fresco e livre de umidade.
• Evite aproximar de materiais que exalem odores.
• Após aberto, utilize o zíper da embalagem, garanta que a sua embalagem esteja bem fechada.
